The 'Saxe–Coburg–Gotha' part of the name (it should actually be Saxe–Coburg and Gotha) is irrelevant here. George V changed the name of the Royal Family to Windsor in 1917, and Prince Albert married Lady Elizabeth Bowes–Lyon in 1923.
